Jersey Sütü

Definition

Milk from Jersey cows, a small dairy breed originating on the island of Jersey in the Channel Islands. It is richer than ordinary cow’s milk in protein, fat and calcium, and slightly yellow in colour because of its higher beta-carotene content.

Key Characteristics

  • Per the source: about 4% protein and 5–6% fat; breed references typically give around 4.8–5% fat and 3.7–3.9% protein, so the source’s fat figure is on the high side
  • Pale yellow colour from beta-carotene; thicker body that “pours heavier” than regular milk
  • Jersey cows are smaller and give less milk per day than high-yield breeds such as Holstein — the source says about 15 litres a day (yields vary widely by herd and feeding)
  • Costs up to ~50% more per litre than regular milk, per the source

Applications

  • Yogurt (sets very firm), butter and cheese
  • Ice cream and specialty coffee — latte foam made with it is more stable
  • Prized by artisan producers and chefs for its creaminess
